Gubbio's is St. Francis' very own coffee shop where you will find not just coffee, but an intentional gathering place where you can grow in fellowship with your faith community (not to mention enjoy delicious coffee, tea, and more!) Find us behind the chapel in the Great Hall foyer!

April marks the 1st birthday of Gubbio's Grand Opening! We are so blessed to have this incredible gathering opportunity for parishioners and guests. Not only is the coffee (and cinnamon rolls) great - but it's even a better space for us to gather to live out our Matthew 28:16-20 mission of spreading the Gospel.

Are you ready to be part of something special? Join the fun, vibrant team at Gubbio’s – the only Catholic coffee shop in Texas! Enjoy free T-shirts, connect with fellow parishioners, deepen your faith, and savor the best coffee, tea, and smoothies in town.

We’re looking for enthusiastic volunteers to join our barista team. No experience is required, and we’d especially love to hear from those with evening availability (Wednesday, Thursday, and Sunday).

We’re thrilled to highlight one of our amazing bakery partners (and fellow parishioners!), Courtney and Jake Poulsen! Since 2010, they’ve been part of the Saint Francis community, and we’re proud to serve their delicious baked goods at Gubbio's.

Courtney and Jake own the Kolache Shoppe, where you'll find handcrafted, fresh kolaches and a full coffee bar, all while they live by their motto: “baking great days.” Visit them at their drive-thru shop in Celina (605 S Preston Rd), open daily from 6 AM - 12 PM on weekdays and 7 AM - 1 PM on weekends.

In honor of the feast of St. Francis, Fr. Rudy shares the story of St. Francis and the wolf of Gubbio!

Today we celebrate the feast of St. Francis of Assisi, the patron of our church! Did you know the story behind our name—St. Francis and the wolf of Gubbio?

Legend has it that during his travels, St. Francis encountered a fierce wolf terrorizing the town, attacking villagers and livestock. With compassion, he approached the wolf, promising food if it would stop its attacks. Miraculously, the wolf understood and followed him back to town.

Initially fearful, the villagers agreed to feed the wolf, which then lived peacefully among them. This beautiful tale embodies St. Francis's belief in the sanctity of all creatures and his mission of peace and understanding. 🕊️❤️
